Cooking in the Trailer & White Chili

Cooking in the trailer took me some time to get used to. Especially when we are on the road (sometimes we have power and sometimes we don't if we dry camp).


I have learned to use my instant pot and I LOVE it!!




Soup, quinoa (or rice), potatoes, meatloaf and more.


One of the recipes that I have made over and over is White Chili. My girls love it and if you add some cornbread its great and filling!!




One thing I love about the instant pot is you can cook meat from frozen in less than an hour. I usually put 4 chicken breasts straight from the freezer in the instant pot and cook for 12-14 mins. Once its done I vent it right away and take the chicken out and put it on a cutting board to cool for a bit.

I dump out all the liquid and then saute the top 4 ingredients. Then add the next 5 ingredients and simmer for a half hour. Then add the sour cream and whip cream. If you are dairy free I have used Coconut Milk or Coconut Cream instead.


Adding Cornbread as a side finishes off this soup! I will post my cornbread recipe next time!!
